Ingredients

1pack(8-oz) dried mixed fruit; finely chopped
¼cupDark raisins
cupWater
8tablespoonsMargarine; cut into pieces
2Eggs
1teaspoonVanilla
1cupAll-purpose flour
teaspoonEqual \"Measure\" -or-
18Packets Equal sweetener
1teaspoonBaking soda
¼teaspoonSalt
¾teaspoonGround cinnamon
½teaspoonGround ginger
¼teaspoonGround nutmeg
¼cupChopped walnuts

Directions

Combine dried fruit, raisins and water in medium saucepan; heat to boiling. Reduce heat and simmer, uncovered, until fruit is tender and water is absorbed, about 10 minutes. Remove from heat and add margarine, stirring until melted; cool to room temperature.

Mix eggs and vanilla into fruit mixture; mix in combined flour, Equal Measure, baking soda, salt and spices. Spread batter evenly in greased baking dish, 11x7x2-inches; sprinkle with walnuts.

Bake in preheated 350ø oven until cake springs back when touched lightly, 30-35 minutes. Cool on wire rack; cut into 1-inch squares.

Makes approx. 2 dozen, 18% calorie reduction from traditional recipe. Per square: 99 calories, 13 g carbohydrate, 2 g protein, 5 g fat, 18 mg cholesterol, 127 mg sodium.
