Mixed citrus salad a la greens restaurant

Yield: 4 Servings

Measure Ingredient
4 cups Spring Lettuce Mix
2 \N Blood oranges; peeled and cut into segments
4 \N Kumquats; sliced thin with the seeds discarded
½ \N Papaya; cut into 1\" slices
1 cup Herb croutons
⅓ cup Lemon juice
½ cup Salad oil
\N \N Salt and pepper

In a large bowl, add the spring mix, blood oranges, kumquats, and papaya, and gently toss. Add the oil, lemon, salt and pepper more or less to taste and toss again. Sprinkle with the croutons, lightly toss, and serve.
