2 cups | Sugar |
1 cup | Dairy eggnog |
1 \N | Light corn syrup |
2 \N | Butter |
1 \N | Vanilla, brandy, or rum flavoring |
½ cup | Nuts; chopped, optional |
In a 2-quart bowl or casserole, mix sugar, eggnog, and corn syrup. Cover and microwave on HIGH 4 to 5 minutes, until boiling, stirring once or twice.
Stir and cover again and microwave on MED (50%) power for 4 to 6 minutes, until mixture reaches a soft-ball stage (235-240 degrees F.). Remove from microwave and let cool to about 110 degrees F. Add butter and flavoring of your choice. Beat until very thick. Add nuts and spread in a buttered pan. When set, cut into squares.
Note: Length of time to cook on MED may vary with microwaves. I had to cook mine longer than the four to six minutes, but a higher powered microwave would take a shorter time. Just continue at MED for 2 to 3 minutes increments until you reach the soft-ball stage.
