Yield: 6 servings
|1 cup||Plain yogurt|
|2 eaches||Mangoes, peeled and cubed (about 2 lb)|
|1 tablespoon||Lime juice|
|⅓ cup||Whipping cream|
|1 tablespoon||Granulated sugar|
Drain yogurt overnight in cheesecloth set in bowl in fridge. Let drain until you have ½ cup yogurt cheese. Discard whey. Process mangoes until smooth, and whisk into yogurt, along with the lime juice. Whip cream and add sugar until whipping cream forms stiff peaks. Fold in mango mixture until thoroughly mixed.
