Mango flummery

Yield: 4 Servings

Measure Ingredient
2 larges Mangos -- peel, slice
2 tablespoons Lemon Juice
1 cup Orange Juice
⅔ cup Sugar -- or substitute
⅓ cup Tapioca Quick Cooking Kind
½ tablespoon Orange Peel -- grated
\N \N Banana Slices -- optional

In a blender or food processor, whirl mangos until pureed; you should have 3 C.

Transfer puree to a 3 qt pan. Stir in lemon juice, orange juice, sugar, and tapioca. Let stand for 5 min.; then bring to a full boil over med-high heat, stirring constantly. Remove from heat; stir in orange peel. Let cool for 15 min.; cover and refrigerate until softly set (about 2 hrs).
