Lowfat white sauce

Measure Ingredient
1 tablespoon Margarine
2 tablespoons White flour
1 cup Lowfat soymilk
\N \N Salt and white pepper; to taste
\N \N Freshly ground nutmeg

Melt the margarine over low heat. Stir in the flour to make a thick paste, and cook, stirring rapidly, for 1 minute. Pour the soymilk very slowly, stirring to avoid lumps. Cook and stir over low heat for several minutes until the sauce is thick. Season.
