|1||Bag coleslaw mix; (or 2 bags broccoli slaw)|
|1 cup||Matchstick carrots|
|1 medium||Red bell pepper; cut into strips, (opt.)|
|¾ cup||Hellman's low-fat mayo; (I use a combination of low-fat and fat free)|
|3 tablespoons||White vinegar; (apple cider vinegar is also good)|
|1 tablespoon||Dijon mustard|
|¼ teaspoon||Celery seed|
|⅛ teaspoon||White pepper|
And here's my facorite recipe for low-fat cole slaw adapted from THE BRAND NAME FAT-FIGHTER'S COOKBOOK:
In a small bowl mix dressing ingredients. In a larger bowl, mix the cabbage, carrots and bell pepper. Toss with dressing. Chill for at least 2 hours.
