| 1 | cup | Matchstick carrots |
| 1 | medium | Red bell pepper; cut into strips, (opt.) |
| ¾ | cup | Hellman's low-fat mayo; (I use a combination of low-fat and fat free) |
| 3 | tablespoons | White vinegar; (apple cider vinegar is also good) |
| 2 | tablespoons | Sugar |
| 1 | tablespoon | Dijon mustard |
| ¼ | teaspoon | Celery seed |
| ⅛ | teaspoon | White pepper |

And here's my facorite recipe for low-fat cole slaw adapted from THE BRAND NAME FAT-FIGHTER'S COOKBOOK:
In a small bowl mix dressing ingredients. In a larger bowl, mix the cabbage, carrots and bell pepper. Toss with dressing. Chill for at least 2 hours.
