Low fat pumpkin oatmeal cookies

Yield: 48 servings

Measure Ingredient
1 cup Pumpkin
2 \N Egg whites -- whipped
1 cup Brown sugar -- packed
1½ cup Unbleached flour
1 teaspoon Baking soda
1 teaspoon Cinnamon
½ teaspoon Nutmeg
½ teaspoon Cloves
3 cups Rolled oats
1 cup Raisins

Preheat oven at 350. Prepare baking sheet with cooking spray. In a mixing bowl, combine pumpkin and egg whites. In another mixing bowl, combine sugar, flour, baking soda, cinnamon, nutmeg, cloves, oats, and raisins. Mix wet ingredients with dry ingredients just until moistened. Drop by tablespoonfuls onto prepared baking sheet, 2" apart. Bake for 15 minutes, or until they seem firm.
