Lemon oregano pasta

Measure Ingredient
1 cup Semolina flour; durum
1 teaspoon Oregano; dried or liquid
OR 1 tb fresh oregano; chopped
1 Egg
2 tablespoons Lemon juice
1½ cup Semolina flour; durum
1 teaspoon Oregano; dried or liquid
1 tablespoon Vegetable oil; optional
1½ tablespoon Lemon juice; (1 1/2 to 2)
1 tablespoon Water; if & as needed

ELECTRIC EXTRUDER

Use whatever method you normally use for mixing and kneading the dough, or follow manufacturer's directions for the machine, watching consistency carefully. Makes about ½ pound. Variations: Lemon Pepper: Omit the oregano and use 1 teaspoon of coarsely ground black pepper. Lemon Dill: Omit the oregano and use 1 teaspoon dill weed. Lemon Rosemary: Omit the oregano and use 1 teaspoon rosemary leaves.

NOTES : Lemon pasta is great with a Greek-style dinner or with fish or chicken.
