Jiffy nutmeg cake -- a one-bowl cake

Ingredients

| 2 | cups | All-Purpose Flour -- sifted |
| 1½ | cup | Sugar |
| 1 | teaspoon | Salt |
| 2 | teaspoons | Baking Powder |
| 1½ | cup | Heavy Cream |
| 3 | Eggs | |
| 2 | teaspoons | Nutmeg -- grated |
| 2 | tablespoons | Dark Rum Or Brandy |
Directions
Preheat oven to 350 F. Sift flour, sugar, salt, and baking powder into a mixing bowl. Add cream, eggs, and nutmeg, and beat for 3 mins.
Add rum or brandy and beat for 1 min longer. Then pour into a greased and floured 9 x 5 x 3-inch loaf pan and bake for 1 hour, or until a toothpick inserted in center comes out clean. Cool on cake racks and frost or enjoy plain.
Yield: 10 servings.
