Jerk seasoning (basic)

2ouncesJamaican pimento; (allspice) crushed
¼teaspoonFreshly grated nutmeg
1teaspoonGround cinnamon
12Scallions; cleaned and chopped
6Scotch Bonnet peppers; halved with seeds OR 12 jalapeno peppers, halved with seeds
cupRed wine vinegar
2tablespoonsVegetable oil
1tablespoonSalt
1teaspoonFresh ground black pepper
2tablespoonsSoy sauce
Hot pepper sauce; (optional)

Directions

Preparation Combine all the ingredients in a blender or food processor, adding hot pepper sauce to taste. Process to liquefy for 1 minute. Pour into a jar and refrigerate until ready to use.
