Javanese pork saute

Yield: 4 Servings

Measure Ingredient
1½ pounds Pork loin; boneless
½ cup Onion; minced
2 tablespoons Peanut butter
2 tablespoons Lemon juice
2 tablespoons Soy sauce
1 tablespoon Brown sugar
1 tablespoon Vegetable oil
1 \N Garlic clove; minced
\N dash Hot pepper sauce
\N \N Rice; cooked, hot
3 mediums Cucumbers; peel, seed, thin sliced
1 tablespoon Onion; minced
2 cups Plain yogurt
½ teaspoon Black pepper
¼ teaspoon Cumin
2 tablespoons Cilantro; chopped



Make raita by combining ingredients. Cover and chill for 2-24 hours to combine flavors.

Cut pork into ½" cubes; place in shallow dish. In blender or food processor combine remaining ingredients except rice and raita. Blend until smooth. Pour over pork. Cover and marinate in refrigerator 10 minutes.

Thread pork on skewers (if using bamboo skewers, soak in water 1 hour to prevent burning). Grill or broil 10-12 minutes, turning occasionally, until done. Serve with hot cooked rice and raita, if desired.
