Indian spice blend

Measure Ingredient
8 teaspoons Cumin
4 teaspoons Ground ginger
2 teaspoons Ground coriander
2 teaspoons Cayenne
4 teaspoons Turmeric
2 teaspoons Black pepper

Combine all ingredients and store in an airtight spice jar. Makes about 7 tablespoons. From the Author: To create your own special Indian blend use some of the following: ginger, coriander, cardamom, cayenne, cinnamon, chilis, mustard seed, turmeric, cumin, black pepper, poppy seeds, fenugreek, fennel, mace, and cloves. Use it any time curry powder is called for.
