Yield: 6 Servings
|½ cup||Brown sugar; packed firm|
|½ cup||Orange juice|
|¼ cup||Melted butter|
|Salt to taste (up to)|
|5 mediums||Sweet potatoes; peeled & sliced|
Combine sugars & cornstarch. Blend well. Stir in orange juice, butter & salt. Simmer over low heat, stirring constantly, until slightly thickened.
Place potatoes in a lightly-greased 2-quart casserole dish. Pour orange sauce over potatoes. Bake at 350 for 30 minutes or until potatoes are tender. Yields 6 servings.
