Hoisin vegetarian noodles

Yield: 4 servings

Measure Ingredient
1 pack Rice vermicelli
2 \N Eggs
200 grams Beansprouts
200 grams Pak choy
3 tablespoons Hoisin sauce
2 tablespoons Chilli sauce
1 tablespoon Light soy sauce
2 tablespoons Vegetable oil
1 tablespoon Garlic puree
½ teaspoon Black pepper

Soak the vermicelli in warm water until soft, and drain. Chop the pak choy into thin strips.

Heat the oil and fry the garlic until light brown. Add the beansprouts, vermicelli, pak choy and stir fry over a high heat for 2 minutes. Crack the eggs into the pan and toss well with the vermicelli. Add all the seasonings and stir fry rapidly for one minute.

Serve with chopped spring onions.
