High-fiber bread quiche

Ingredients

4slicesHigh fiber bread; stale
1cupLow fat cottage cheese
2Onions; minced
13½ounceCan evaporated skim milk
3Eggs
1tablespoonParsley; minced
Salt & pepper to taste
2tablespoonsBacon bits; optional

Directions

Line 10" pie pan with bread. Spread with cottage cheese and onions.

Combine remaining ingredients except bacon bits, in blender. Cover; blend until smooth. Pour over onion layer. Sprinkle with bacon bits.
