High-fiber bread quiche

Yield: 8 Servings

Measure Ingredient
4 slices High fiber bread; stale
1 cup Low fat cottage cheese
2 \N Onions; minced
13½ ounce Can evaporated skim milk
3 \N Eggs
1 tablespoon Parsley; minced
\N \N Salt & pepper to taste
2 tablespoons Bacon bits; optional

Line 10" pie pan with bread. Spread with cottage cheese and onions.

Combine remaining ingredients except bacon bits, in blender. Cover; blend until smooth. Pour over onion layer. Sprinkle with bacon bits.
