Herbed mashed sweet potatoes

Yield: 4 Servings

Measure Ingredient
2 pounds Sweet potatoes (About 4 med)
1½ tablespoon Butter
1 tablespoon Low-fat milk
4 tablespoons Snipped chives
1½ teaspoon To 2 tsp minced fresh thyme
\N \N (Or 1/2 tsp dried thyme)
\N \N Salt and fresh grd pepper to
\N \N Taste

Preheat oven to 400 degree F. Wash sweet potatoes and prick in several places with a fork Place potatoes on a cookie sheet and bake far about 1 hour, or until they feel soft when squeezed. Holding them with a cloth, cut them in half and remove skin. Put flesh into a large bowl and mash well with butter. buyer. Add milk, herbs, salt and pepper.

Transfer to a casserole dish and, if necessary, reheat briefly in the oven or microwave. May be prepared in advance and reheated just before serving. Makes 4-6 servings.
