Herbed mashed potatoes

Ingredients

cupCubed peeled baking potato (about 2 3/4 pounds)
2eachesGarlic cloves, halved
½cup1% low-fat milk
½cupLow-fat sour cream
2tablespoonsMinced fresh parsley
2tablespoonsMinced fresh oregano
1tablespoonMinced fresh thyme
1tablespoonMargarine
¾teaspoonSalt
teaspoonPepper

Directions

Place potato and garlic in a large saucepan; cover with water and bring to a boil. Cook 20 minutes or until very tender; drain.

Return potato mixture to pan. Add milk and remaining ingredients; beat at medium speed of a mixer until smooth. Yield: 6 servings (serving size: 1 cup).
