Pureed sweet potatoes

Measure Ingredient
1 medium Sweet potato

Scrub sweet potato clean and pierce all over with a fork. Place sweet potato on a foil-lined sheet pan and bake in a 350 degree oven for 1 hour, turning after 30 minutes, or until tender when poked with a fork. Cool sweet potato completely. Peel sweet potato, cut into chunks and pass through a food mill or puree in a food processor. Add tablespoons of water until desired consistency is reached. This recipe yields about 1½ cups pureed sweet potato.
