1 | cup | Low-fat yoghurt |
¾ | cup | Apple sauce |
2 | cups | Wholemeal flour |
½ | cup | Rolled oats |
½ | cup | Oat bran |
3 | teaspoons | Baking powder |
2 | teaspoons | Cinnamon |
½ | cup | Raisins |
½ | cup | Chopped apricots |
Directions
Preheat oven to 350øF, prepare pans. Beat the egg whites lightly then add milk, yoghurt & apple sauce. Combine flour, rolled oats, bran, baking powder, cinnamon, raisins & apricots. Add the dry mix to the wet mix until just combined. Spoon into pans & bake for 20 mins. Makes 12 muffins.
