Ham and potato patties^

Measure Ingredient
1½ cup Leftover mashed potatoes
1 \N Egg
1 cup Cooked ham, chopped
1 tablespoon Onion
\N \N Little pepper
\N \N Flour
\N \N Bacon fat or lard

Mix together potatoes and egg with a fork. Add ham, onion and pepper.

Shape into flat patties. Dip in a little four and fry in bacon fat or lard. Serve hot. Many of the recipes in this collection did not contain amounts or oven temperatures. I have typed them in as they appear in the book, typos and all.
