1½ cup | Leftover mashed potatoes |

1 cup | Cooked ham, chopped |
1 tablespoon | Onion |
\N \N | Little pepper |
\N \N | Flour |
\N \N | Bacon fat or lard |
Mix together potatoes and egg with a fork. Add ham, onion and pepper.
Shape into flat patties. Dip in a little four and fry in bacon fat or lard. Serve hot. Many of the recipes in this collection did not contain amounts or oven temperatures. I have typed them in as they appear in the book, typos and all.
