Guava glazed grilled chicken

Guava Marinade-

1cupLime juice
2tablespoonsWhole ginger, crushed
4eachesGarlic cloves, crushed

1cupWhite wine vinegar
1Whole chicken, cut into 4

Guava Glaze:
1gallonGuava juice
1cupSherry wine vinegar
2Whole smoked papaya
2tablespoonsChinese five spice powder
½cupOyster sauce
3tablespoonsBlack pepper
Garnish: Black sesame seeds

Directions

Marinade: Combine all ingredients and marinate chicken overnight, covered.

Glaze: Reduce guava juice to a glaze consistency. Add all other ingredients and blend. Remove chicken from marinade and pat dry.

Grill chicken and coat with glaze to finish. Sprinkle with black sesame seeds for garnish.

Yield: 4 servings
