| ½ | cup | Chopped onions (green or regular) |
| ½ | cup | Chopped green chilies; fresh or drained canned |
| 2 | cups | Grated sharp cheddar cheese |
| 1 | cup | Grated Monterey Jack cheese (save some for topping) |
| ½ | teaspoon | Chili powder; optional |
| 1 | Jalapeno; seeded and chopped, optional | |
Directions

Date: Wed, 7 Aug 1996 19:45:20 -0500 Cook rice according to directions. Mix all ingredients except Monterey Jack cheese for topping; put in casserole dish. Top with cheese. Cook uncovered about 45 minutes in preheated 275-degree oven.
