Orange rice #1

Yield: 6 Servings

Measure Ingredient
2 cups Diced celery and leaves
6 tablespoons Chopped onion
½ cup Melted butter
2 cups Uncooked rice
1 teaspoon Salt
2½ cup Boiling water
1½ cup Orange juice
¼ cup Grated orange rind

Saute celery and onion in butter until tender. Set aside. Stir rice and salt into boiling water; cover and simmer 15-17 minutes. Add orange juice, rind and sauteed vegetables. Cover, cook 5 minutes or until tender.
