Green noodle pudding

Yield: 4 servings

Measure Ingredient
4 \N Egg yolks
4 tablespoons Chopped scallions
1½ cup Cooked chopped spinach
½ pounds Fine noodles -- cooked and
\N \N Drained
1 teaspoon Salt
4 \N Egg whites -- stiffly
\N \N Beaten

Beat the egg yolks, then stir in the scallions, spinach, noodles and salt.

Fold in the egg whites. Pour into a 1½-quart greased baking dish. Bake in a 350 degree oven 30 minutes. Serve hot with meat or dairy dishes. Serves 4 to 6. Recipe Sour Recipe By : Jennie Grossinger - "The Art Of Jewish
