Greek basil dressing

Ingredients

1Garlic clove; minced
1Shallot or scallion cut into thirds
6Greek olives; pitted
1teaspoonDijon mustard
1tablespoonBalsamic vinegar
¼teaspoonGrated lemon zest
1tablespoonFresh lemon juice
1smallTomato; quartered
¼teaspoonFreshly ground pepper
3tablespoonsChopped fresh basil
¼cupOlive oil
Salt and pepper; to taste

Directions

In a blender or food processor, blend all ingredients except olive oil. Add olive oil gradually, processing until combined. Add salt and pepper to taste.

Yield: Makes ⅔ cup.
