Glazed citrus bran loaf

1tablespoonGrated orange rind
1tablespoonGrated lemon rind
1cupBran cereal
cupAll-purpose flour
½cupGranulated sugar
1tablespoonBaking powder

Gup granulated sugar
1tablespoonOrange juice
1tablespoonLemon juice

Directions

BEAT egg, milk, melted margarine, orange and lemon rind together in mixing bowl to blend. Stir in cereal; set aside. COMBINE flour,½ cup sugar, baking powder and salt in large bowl. Stir well. ADD cereal mixture to dry ingredients stirring just until well blended.

POUR into greased 8" x 4" loaf pan. BAKE at 350 F for 55 to 60 min.

Glaze immediately. BRING ⅓ cup sugar, orange and lemon juice to a boil in small saucepan, for glaze. PRICK hot loaf with skewer or wooden pick to make many small holes through loaf. Spoon glaze slowly over surface of pricked loaf, allowing it to soak in. Cool loan in pan, then remove and slice to serve. Servings: 1 loaf
