German beef tartar - schlemmerschnitte

4ouncesBeef filet; or other lean steak, scraped not ground
1Egg yolk
1teaspoonOlive oil
1teaspoonKetchup
1Anchovy; chopped
5Capers; chopped
1pinchEach: salt, pepper, paprika and Worcestershire sauce
1sliceToast; buttered, crusts removed
½ounceFresh caviar
1tablespoonOnion; minced
1Gherkin pickle; sliced

Directions

Mix beef, egg yolk, oil and seasonings. Spread on buttered toast and top with caviar. Serve with minced onion on the side along with a sliced gherkin and an ice-cold shot of vodka or Schnaps.
