Great gazpacho

Yield: 6 servings

Measure Ingredient
3 cups Vegetable or tomato juice
1 medium Onion, minced
2 mediums Tomatoes, diced
1 each Green bell pepper, minced
1 each Garlic clove, crushed
1 medium Cucumber, diced
2 tablespoons Lemon juice
2 tablespoons Red wine vinegar
1 teaspoon Dried tarragon
1 teaspoon Minced fresh basil
1 pinch Ground cumin
1 dash Hot sauce
2 tablespoons Olive oil
\N \N Salt and pepper, to taste

Combine all ingredients and chill for 2 hours.

HINT: Out of time? Forget all the mincing and chopping. Cube the vegetables, then throw all of the ingredients into a blender or food processor and blend slowly until the vegetables are chunky and the soup is well blended.
