Ingredients

½cupWater
1teaspoonSalt
2tablespoonsOlive oil
3tablespoonsRed wine vinegar
1Clove (small) garlic; minced
1tablespoonChopped onion
2tablespoonsDiced pimiento
2cupsPeeled; diced tomatoes
cupFinely chopped celery
cupFinely chopped green pepper
3dashesTabasco; more or less
2cupsTomato juice

Directions

Pur‚e all ingredients except tomato juice in blender. Add juice and mix until well blended. Much better made a day ahead. Yield: 4 servings.
