Gazpacho (moosewood)

Ingredients

| 1 | teaspoon | Honey (optional) |
| 1 | medium | Cucumber, peeled, seeded, and minced |
| 2 | Scallions, minced | |
| ½ | Lemon, juice of | |
| 1 | Lime, juice of | |
| 1 | teaspoon | Tarragon |
| 1 | teaspoon | Basil |
| ½ | teaspoon | Cumin |
| ¼ | cup | Freshly minced parsley |
| 2 | tablespoons | Olive oil |
| Salt | ||
| Black pepper | ||
| Cayenne (all above to taste) | ||
| 2 | cups | Freshly diced tomatoes |
Directions
Combine all ingredients.
Optional: Pur=C7e all or some.
Chill until very cold.
