Garlic coleslaw

Yield: 8 servings

Measure Ingredient
2 tablespoons Vinegar
2 teaspoons Salt; (or less)
1 teaspoon Black pepper; (or less)
3 smalls Cloves garlic; crushed
6 tablespoons Vegetable oil
1 medium Head cabbage; shredded
2 tablespoons Chopped fresh cilantro
2 \N Tomatoes; chopped
1 \N Cucumber; peeled and chopped



To make garlic vinaigrette, mix all dressing ingredients and let stand several hours to blend flavors. To assemble salad, place cabbage in a large bowl. Add vinaigrette and cilantro; mix. Add tomatoes and cucumbers.
