Fruit and seafood kabobs

Yield: 6 Servings

Measure Ingredient
18 \N Fresh medium size shrimp
18 \N Fresh medium size scallops
\N \N Boiling salted water to cover
12 \N Dried pitted prunes,stewed
12 \N Dried pitted apricots,stewed
12 \N Maraschino cherries
¼ cup Butter or margarine, melted
\N \N (butter is best)

Cook shrimp and scallops separately in salted water. Simmer about 5 minutes. Shrimp will turn pink and scallops will turn milky white.

Prunes and apricots should be cooked according to package directions but not so they fall apart. Drain cherries well.

Arrange on 6 skewers. Lay skewers on baking sheet with sides. Chill until needed. Brush with melted butter and heat in 425øF oven for about 5 to 10 minutes until piping hot. Serves 6 Typed in MMFormat by cjhartlin@...
