Fresh pineapple with frozen berry sauce (mf)

Yield: 6 Servings

Measure Ingredient
1 Ripe pineapple, peeled, cored and cut into chunks
10 ounces Frozen raspberries, thawed
10 ounces Sliced strawberries, thawed
Sugar to taste
2 tablespoons Orange juice or orange liqueur
Mint leaves for garnish

Puree the thawed fruit, then pass them through a sieve to remove the raspberries seeds. Stir in sugar to taste if need be with orange juice or liqueur

Set a clump of chopped pineapple in the middle of each dessert plate; drizzle sauce around the pineapple and garnish with mint leaves.

Yield: 4 to 6 servings
