Fresh pineapple boats

1cupSeedless grapes; halved
1cupFresh strawberries; halved
cupChopped fresh parsley
1cupFresh strawberries; halved
2Oranges or tangerines; peeled and

2Kiwifruit; peeled and sliced
2Bananas; sliced
cupChopped walnuts

Directions

Cut pineapple into quarters lengthwise, leaving leaves intact. Remove pineapple in chunks, leaving ½-inch shell. Line each pineapple shell with lettuce leaves. Combine 1 cup of the pineapple chunks with the grapes, strawberries, orange or tangerine sections, kiwi and bananas. Arrange tossed fruit on lettuce in the pineapple shells. Sprinkle with walnuts.
