Fresh pineapple slaw

1mediumGreen pepper, julienned
3tablespoonsWhite wine vinegar
3tablespoonsUnsweetened pineapple juice
1tablespoonHoney
1teaspoonOil
2ouncesCrumbled blue cheese

Directions

1. Combine pineapple, carrot, and green pepper in a medium bowl, toss gently. Combine vinegar, and the next 3 ingredients and stir well with a wire whisk. Pour over pineapple mixture and toss. Cover and chill 1 hour. Top with blue cheese just before serving.
