French-fried mushrooms

Yield: 30 servings

Measure Ingredient
1 \N Egg
½ cup Milk
½ teaspoon Salt
30 mediums Mushrooms
⅓ cup Flour
1 cup Corn flake crumbs
\N \N Oil or shortening for frying
\N \N Salt to taste
\N \N Grated Parmesan cheese
\N \N Lemon wedges, if desired

In shallow dish, beat egg with milk and salt. In another dish, roll mushrooms in flour. Dip mushrooms in egg mixture and coat with corn flake crumbs. Fry in hot oil or shortening in fryer for 1 to 2 minutes until golden. Drain. Sprinkle with salt to taste and grated Parmesan cheese. Serve with lemon wedges, if desired.

Yields: 30 appetizers
