Fluffy potato casserole

2 | cups | Mashed Potatoes |
1 | pack | (8 Ounce) Cream Cheese; see |
1 | small | Onion; Finely Chopped |
2 | Eggs; Well Beaten | |
1 | tablespoon | Flour |
¼ | teaspoon | Salt |
¼ | teaspoon | Black Pepper |
1 | can | (3 Oz.) French Fried Onion Rings |
Combine all ingredients with the exception of the can of onions in electric mixer bowl. Cream until fluffy. Pour into a greased 1½ qt. casserole.
Spread crushed onions on top and bake uncovered at 350 degrees for 30-35 minutes
Note: My low fat and variation: Use non-fat cream cheese and eliminate the eggs. Use some milk to thin to desired consistency. I have used lite sour cream and some non-fat Ranch dressing dip. That is really yummy.
