Fluffy pancakes

Yield: 4 Servings

Measure Ingredient
1 teaspoon Oil
1 \N Egg
1 cup Milk
1½ cup Flour; any kind (I use a mixture of unbleached; whole wheat; and about 1/4 cup oat bran)
4 teaspoons Baking powder

Whip the egg and oil together until foamy, then add remaining ingredients.

Batter will be thick. Stir just until mixed, some lumps are ok. Makes about a dozen medium size pancakes.
