½ cup | Mozzarella cheese; (2 oz) shredded |
½ cup | Pepperoni; chopped |
½ cup | Tomato; chopped |
¼ cup | Green bell pepper, chopped |
2 teaspoons | Italian seasoning |
Heat griddle or skillet; grease if necessary. Beat baking mix, milk, and eggs with wire whisk or hand better until well blended. Stir in remaining ingredients. (batter will be thick.) Pour batter by scant ¼ cups onto hot griddle, spread slightly. Cook until edges are dry. Turn; cook until golden until golden brown. Serve topped with warm pizza or spaghetti sauce, grated Parmesan cheese, pepperoni, tomato and bell pepper if desired. CAL: 120 (1 PANCAKE).
