Pizza pancakes

Yield: 14 pancakes

Measure Ingredient
2 cups Bisquick baking mix; original
1 cup Milk;
2 \N Eggs;
½ cup Mozzarella cheese; (2 oz) shredded
½ cup Pepperoni; chopped
½ cup Tomato; chopped
¼ cup Green bell pepper, chopped
2 teaspoons Italian seasoning

Heat griddle or skillet; grease if necessary. Beat baking mix, milk, and eggs with wire whisk or hand better until well blended. Stir in remaining ingredients. (batter will be thick.) Pour batter by scant ¼ cups onto hot griddle, spread slightly. Cook until edges are dry. Turn; cook until golden until golden brown. Serve topped with warm pizza or spaghetti sauce, grated Parmesan cheese, pepperoni, tomato and bell pepper if desired. CAL: 120 (1 PANCAKE).
