Fillets of whiting wrapped in bacon

55 | grams | Fine brown breadcrumbs |

Melt butter, add onion, saut gently and add all other ingredients. Cut each fillet in half lengthwise. Place stuffing on each fillet, roll up and wrap a thin slice of streaky rasher (bacon) around each roll. Place in a buttered ovenproof dish, cover and bake in a moderate oven 190ø C/375ø F/Gas Mark 5 for 15 minutes. Remove cover to brown the dish for last five minutes. Substitutions Cod, haddock, pollock, hake.
