Fillets of whiting wrapped in bacon

4 \N Streaky rashers; (bacon) - rind

55 grams Butter 1 onion - finely chopped
55 grams Fine brown breadcrumbs
1 teaspoon Chopped parsley

\N \N Pepper and salt

Melt butter, add onion, saut‚ gently and add all other ingredients. Cut each fillet in half lengthwise. Place stuffing on each fillet, roll up and wrap a thin slice of streaky rasher (bacon) around each roll. Place in a buttered ovenproof dish, cover and bake in a moderate oven 190ø C/375ø F/Gas Mark 5 for 15 minutes. Remove cover to brown the dish for last five minutes. Substitutions Cod, haddock, pollock, hake.
