8 | slices | Bacon (turkey); cut in small pieces |
1 | tablespoon | Oil |
1 | large | Egg; beaten |
4 | cups | Cooked rice |
1 | can | Sliced mushrooms; (4 oz.) drained |
2 | Green onions; chopped | |
2 | tablespoons | Soy sauce, low sodium |
Directions
PLACE turkey bacon and oil in large nonstick skillet. Cook and stir on medium-high heat 8 minutes or until lightly browned. PUSH turkey bacon to side of skillet. Pour in egg; stir constantly until egg is cooked and separated into small pieces. ADD remaining ingredients; mix well. Cook 5 minutes, stirring frequently. Makes 4 servings.
