Favorite fried rice

Yield: 4 Servings

Measure Ingredient
8 slices Bacon (turkey); cut in small pieces
1 tablespoon Oil
1 large Egg; beaten
4 cups Cooked rice
1 can Sliced mushrooms; (4 oz.) drained
2 Green onions; chopped
2 tablespoons Soy sauce, low sodium

PLACE turkey bacon and oil in large nonstick skillet. Cook and stir on medium-high heat 8 minutes or until lightly browned. PUSH turkey bacon to side of skillet. Pour in egg; stir constantly until egg is cooked and separated into small pieces. ADD remaining ingredients; mix well. Cook 5 minutes, stirring frequently. Makes 4 servings.
