Yield: 2 Fruit cake
|1 pack||1 lb 3 oz white cake mix|
|1 teaspoon||Lemon extract|
|½ cup||Sifted all purpose flour|
|1 pounds||Light raisins|
|1 pounds||Whole pecans|
|½ pounds||Whole candied cherries|
|½ pounds||Candied pineapple, cut into strips.|
Line two greased 8½ x 4 ½ x 2 ½ inch loaf pans with waxed paper; grease paper.
Combine cake mix, egg, water, salt and lemon extract in large bowl of electric mixer. Beat two minutes at medium speed. Add 3 eggs; b eat w minutes longer.
Mix flour and remaining ingredients; stir into cake batter.
Pour into the two prepared pans.
Bake at 275 degrees for about two hours.
