Yield: 18 Servings
Measure | Ingredient |
---|---|
1 pack | Graham cracker crumbs (16 ounces); crushed |
1 \N | Container red candied cherries (6 ounces); coarsely chopped |
1 \N | Container green candied cherries (6 ounces); coarsely chopped |
1 \N | Container candied pineapple; (6 ounces) |
2 cans | Sweetened condensed milk; (14 oz. each) |
1½ cup | Pecans; coarsely chopped |
Line a 9x5 inch loaf pan with plastic wrap, letting the wrap hang over the sides a few inches. In a large bowl, combine all the ingredients and thoroughly mix with your hands. Place the mixture in the lined pan and cover well. Freeze for at least 8 hours, or overnight, before serving. To serve, invert onto a serving platter, remove the pan and plastic wrap, and cut into slices. Store any remaining cake in the freezer.
Note: This is a very rich cake, so keep in mind that a small slice wil go a long way! This is one fruitcake that will NOT get passed on! This recipe comes from; Mr. Food® Cool Cravings ISBN 0-688-14579-5 Published in 1997
