Crunchy chicken nuggets

Measure Ingredient
⅓ cup Plus 2 tsp. unsweetened
\N \N Wheat germ
1 teaspoon Paprika
½ teaspoon Coarsely ground black pepper
¼ teaspoon Salt
15 ounces Skinless boneless chicken
\N \N Breasts, cut into bite-sizes
2 teaspoons Vegetable oil

In gallon-size sealable plastic bag, combine wheat germ, paprika, pepper and salt; seal bag and shake to blend. Add 3-4 chicken pieces; do not crown bag. Seal bag and shake to coat. Place coated chicken pieces on large plate; repeat, using remaining chicken pieces.

In large nonstick skillet, heat oil; add coated chicken pieces. Cook, turning as needed, 10-12 minutes, until golden brown on all sides and cooked through.

EACH SERVING PROVIDES: ½ fat; 3 proteins; ½ bread PER SERVING: 180 calories; 28g protein; 5g fat; 6g carbohydrate; 20mg calcium; 205mg sodium; 62 mg cholesterol; 1 g dietary fiber
