|4 cups||Cubed cooked potatoes|
|½ cup||Chopped green bell pepper|
|2 tablespoons||Chopped onion|
|\N \N||Salt and pepper|
|1 cup||Shredded cheddar cheese; shredded|
|\N \N||(Cracker Barrel Brand)|
Cook potatoes, green pepper and onion in margarine until lightly browned.
Season to taste. Break eggs over potato mixture; cover, cook until eggs are done. Sprinkle with cheese; cover and heat until cheese melts.
