Cool lemon chicken salad~

Ingredients

| ½ | cup | Miracle Whip |
| 2 | tablespoons | Fresh basil -- chopped OR |
| 2 | teaspoons | Dried basil |
| 1 | tablespoon | Lemon juice |
| 1 | teaspoon | Grated lemon rind |
| 2 | cups | Chopped, cooked chicken &/or |
| Turkey | ||
| 1 | cup | Halved red or green grapes |
| ½ | cup | Halved chinese pea pods * |
| ½ | cup | Thin sliced red onion ** |
| Lettuce leaves - chopped or | ||
| Torn -- optional | ||
Directions
* remove "strings", blanch and cut to bite-sized pieces. ** regular onion or green onion - including tops can be used.
Mix Miracle Whip, basil, lemon juice and peel. Add remaining ingredients, except lettuce. Mix lightly and refrigerate. Serve on lettuce, if desired.
Serves 4 but recipe doubles well.

Note: Can add any salad "fixing" (tomatoes, bean sprouts, etc.; black olives work okay but alter the taste of the whole salad) at serving time.
