Lemon barbecue chicken salad

Yield: 6 Servings

Measure Ingredient
2 cups Cut-up cooked chicken or turkey; chilled
1 tablespoon Lemon juice
½ teaspoon Salt
2 cups Cooked rice; chilled
2 larges Stalks celery; sliced (two is about 1-1/2 cups)
½ cup Sliced stuffed olives
3 tablespoons Bacon-flavored vegetable protein chips (bacos)
Parsley sprigs
¾ cup Mayonnaise
1 tablespoon Barbecue sauce
¼ teaspoon Liquid smoke

BARBECUE DRESSING

Sprinkle chicken with lemon juice & salt. Add rice, celery, olives & barbecue dressing; toss lightly & sprinkle with protein chips & garnish with parsley.
