Tangy lemon chicken salad

1pack(4.8 oz) RICE-A-RONI Long Grain and Wild Rice Chicken with Almonds
5tablespoonsCanola or Olive oil
2cupsChopped; cooked chicken
¼cupChopped green onion
3tablespoonsLemon juice
½teaspoonGrated lemon peel
cupShredded spinach leaves or Romaine lettuce leaves

Directions

Prepare Rice-a-Roni Mix as package directs, substituting 1 T oil for margarine. Cool 10 minutes. In a large bowl, combine prepared rice mixture, 4 T oil, chicken, onions, lemon juice, and lemon peel.
