Yield: 1 pumpkin
Wash pumpkin and cut in half, crosswise.
Remove seeds and strings, reserving seeds for roasting, if desired.
Place pumpkin in a baking pan face down, shell up, in ½-inch of water. Bake at 325 degrees for 1 hour, or until tender. Large pumpkins may require longer baking time.
Scrape the pulp from the shell and put through a strainer or ricer.
